Homemade Baked Beans

I always wanted a simple homemade baked bean recipe that wasn't about soaking beans for hours, days or chemical filled additives to make the recipe easy. All of the premade canned baked beans have horrible ingredients and the organic ones do not taste good and for our family they just aren't affordable anyway. After years of working on an easy, healthy recipe I finally figured one out. The only part of this recipe that is an "extra " is an instant pot. You could surely make this in a crock pot or on the stove top it will just take much longer.


Ingredients:


  • 2 strips of bacon chopped into small pieces ( can remove if vegetarian or vegan)

  • one med onion chopped

  • 3 cloves garlic chopped

  • 3 cup dry navy beans rinsed and sorted

  • 4 cups chicken bone broth or vegetable broth if vegan ( its an entire box of broth)

  • 15oz.can crushed tomatoes, tomato sauce ( it depends on what consistency you want or what you have on hand)

  • 2 T good mustard

  • 3 T maple syrup

  • 1 T molasses

  • 2 T Worcestershire sauce ( use coconut aminos if vegan)

  • 2 T apple cider vinegar

  • 1 tsp chili power

  • 1/2 tsp onion power

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 6 T brown sugar (you can use more maple syrup instead of brown sugar)

  • 1 1/2 tsp sea salt


    Directions

  • Turn instant pot onto saute and put the bacon in and start cooking once it's cooked remove and add the chopped onions. Add the garlic cloves right before you're ready to add the beans because garlic burns easily and doesn't need much time to cook.

  • Add the rinsed navy beans, the chicken, beef or vegetable stock and your can of tomato and stir.

  • Put the lid on and set to manual on 85 minutes for instant pot. If you're cooking on the stove put the lid on and simmer or crock pot the time will differ because its not being pressure cooked. Both the stove and crock pot will need much more time to soften the beans and thicken the sauce they are in. Thats it. When the 85 minutes is up stir and enjoy!
