Fall Banana Muffins

In the fall we love to make warm breakfasts and snacks. Here is how to make one of our favorites.
Ingredients
3 ripe bananas
2 eggs (can use 1/2 c apple sauce instead of eggs)
1/2 cup sugar ( if you like things super sweet add 1c)
1/2 cup olive oil ( or you can use melted butter instead)
1 tsp. vanilla
1/4 c milk ( can use coconut milk)
2 cups unbleached organic all purpose flour
1 tsp. cinnamon
1/4 tsp. nutmeg (we grate the nut on a microplane grater)
1/4 tsp. ground cloves
2 tsp. baking soda
2 tsp. baking powder
1 C of mini chocolate chips but these are optional but add great flavor
Directions
Add all the wet ingredients together in an electric mixer and combine until smooth. While the wet ingredients are mixing add all the dry ingredients together in a medium bowl and combine. Then slowly add the dry ingredients to the wet and mix until combined. Do NOT over mix or the muffins will be tough. I use a silicon muffin pan and but you could use whatever muffin pan you have and use non bleached muffin liners. I fill them to 3/4 full. Then bake at 325 degrees for around 25 minutes ( depending on pan and muffin size times may vary). Enjoy warm with a big mug of coffee or hot chocolate!
